What Is Natural Process Coffee?
Natural process coffee — also called dry process — is coffee where the whole cherry is dried before the seed inside is removed. After harvest, the intact fruit: skin, pulp, and all, is spread on raised beds or patio surfaces and left to dry in the sun for three to six weeks. The fruit dries around the bean, fermenting slowly, and imparting flavor along the way. The result is a cup that tends toward fruit-forward, wine-like, and full-bodied.
That process is why you can pick up a natural-process Ethiopian and taste blueberries, stone fruit, or something close to red wine without any flavoring being added. The fruit was literally there, wrapped around the bean, for weeks. It left its mark.
How Natural Processing Works: Step by Step
Harvest. Cherries are picked at peak ripeness. Selective picking, not strip harvesting, matters here — underripe or overripe cherries in the batch will show up in the cup later.
Sorting. Freshly picked cherries go through a water float. Dense, ripe cherries sink. Underripes and defects float and are skimmed off. Same step as any processing method.
Drying. Here's where natural processing diverges from washed. Instead of removing the fruit before drying, the whole cherry goes to raised African beds or concrete patios. Workers spread them in a single layer and turn them multiple times a day to prevent mold and ensure even drying. This stage takes anywhere from three to six weeks depending on the weather, the altitude, and how much moisture is in the cherry to begin with.
Milling. Once the cherry is dry — the dried skin and fruit crack and feel like a hard husk — it goes through a huller that removes the dried fruit layer, the parchment, and the silverskin in a single pass. What comes out is the green coffee bean, ready for export.
Roasting. The green bean arrives at the roastery carrying the influence of everything that happened during drying. How the roaster handles that fruit character determines whether the final cup is clean and fruit-sweet or tipping toward fermented and funky.
How Natural Process Affects Flavor
During those weeks of drying, sugars and fermentation byproducts from the fruit absorb into the bean. That's the mechanism. The cherry's natural sugars, the microbial activity on the fruit surface, the slow breakdown of the pulp — all of it imprints on the seed.
What that produces in the cup: fruit-forward flavor (blueberry, strawberry, tropical fruit, peach are common), a heavier body than most washed coffees, lower acidity, and what people often describe as a wine-like or complex sweetness.
A natural Ethiopia from Yirgacheffe or Sidama often tastes genuinely like blueberries. Not because of flavoring or additives. Because the blueberry-adjacent compounds in the cherry transferred to the bean and survived the roast.
What we look for in a natural-process coffee: balanced fermentation, no off-notes that cross from "complex" into "sour" or "vinegary," and a sweetness that holds up across multiple brew methods. Fermentation is a spectrum. Well-controlled natural processing produces clean, fruit-sweet coffee. Sloppy natural processing produces something that tastes like it's going off. The difference comes down to how carefully the drying phase is managed.

Neither is objectively better. They're different tools for expressing what a coffee can do. A washed Colombian shows you the clean, bright, terroir-specific version of that origin. A natural Ethiopian shows you the ripe, fruit-saturated, fermentation-influenced version. Both can be outstanding.
Natural Processing Across Origins
Ethiopia is where natural processing started — the original home of arabica coffee. Harrar naturals and Sidama naturals have been the benchmark for what the style can do. The fruity, wine-like character that defines "natural process" in the global conversation traces back here.
Brazil is the largest natural-process producer by volume. Brazilian naturals tend toward chocolate, nut, and caramel profiles rather than the bright fruit of Ethiopian naturals. Lower altitude, different varieties, and a less ferment-forward environment produce a softer, more approachable result.
