Coffee Origins & Taste Profiles

Coffee is shaped by where it’s grown—altitude, soil, and climate all play a role in the flavors you find in your cup. For example, coffee from higher altitudes tends to have bright acidity and more complex flavors. Think of it like biting into a crisp apple—that tangy, lively sensation is what we mean by acidity. In regions like Ethiopia and Colombia, the beans thrive in these conditions, giving their coffees a vibrant, punchy profile. Lower altitude coffees, often found in countries like Brazil and Indonesia, tend to have a smoother, more chocolatey vibe, perfect for those who prefer a mellow cup.

Natural vs. Washed Processing

Processing is another important factor that impacts flavor. Natural processing involves drying the coffee cherries with the fruit still attached, which results in a fuller, more fruit-forward taste—like biting into a juicy berry. Washed processing removes the fruit before drying, giving you a cleaner, crisper cup with more clarity and bright acidity—think fresh lemonade on a hot day. These two methods are the most common, but these days, coffee producers are experimenting with fermentation techniques to create wild new flavors. It’s like the craft beer world but with coffee beans instead of hops.

How Coffee is Grown: From Seed to Tree

Coffee takes time. It starts with a seed that’s carefully planted in nutrient-rich soil. The tree needs about 3 to 4 years to produce its first fruit, called coffee cherries. Depending on the climate and elevation, coffee trees can produce cherries for 5-10 years before their productivity begins to decline. Coffee is typically grown in the "coffee belt" between the Tropic of Cancer and the Tropic of Capricorn, where conditions are just right for coffee to thrive.

Harvesting Coffee: The Right Timing

Coffee cherries ripen at different times, so harvesting can be a lengthy process. In many regions, workers hand-pick the ripe cherries to ensure the best quality. Timing is crucial—if cherries are harvested too early, you get a sour, underdeveloped taste. Too late, and things turn overripe and funky (and not the cool kind of funky). Skilled pickers know how to spot cherries at their prime, ensuring your morning brew is as tasty as possible.

The Importing Process: From Farm to Cup

Once the cherries are harvested and processed, the beans are shipped to roasters around the world. We import our beans through a local Orange County family-operated business, who maintain strong relationships with farmers and producers across the globe. Every bean we source is fully traceable, and we know exactly where it’s coming from. The importing process is carefully managed to ensure the highest quality, with strict attention to maintaining the integrity of the beans throughout, guaranteeing that what reaches you is clean, fresh, and free from any undesirable conditions.

Robusta vs. Arabica

Coffee generally falls into two main types: Robusta and Arabica. Here’s the lowdown:

Arabica:

  • Grown at higher altitudes, often above 600m.
  • Known for smoother, sweeter flavors with hints of fruit and floral notes.
  • Contains less caffeine than Robusta.
  • More delicate plants, requiring specific climates and care.
  • Often the go-to for specialty coffee.

Robusta:

  • Grown at lower altitudes, often below 600m.
  • Known for stronger, more bitter flavors with earthy, nutty notes.
  • Contains nearly double the caffeine of Arabica, giving it a bold kick.
  • Hardier plants, resistant to pests and diseases.
  • Often used in espresso blends for its rich crema and punchy profile.
